Although indigenous to America's Pacific Northwest, the largest group of Pacific White Sturgeons resides in Northern Italy Calvisius caviar farm, one of the world's largest aquaculture caviar farm. Calvisius large scale aquaculture coupled with sophisticated technology allows a continuous sturgeon roe harvest cycle spanning from October to late spring; consequently, for most of the year, Calvisius caviar inventory is based on a relay system of fresh caviar; in turn, Calvisius can afford to use very low amounts of salt for preservation, because any caviar sold and distributed is readily replaced with a new batch of fresh caviar. In other words, Calvisius white sturgeon caviar is the freshest, most flavorful and delicate in the world.
Calvisius is a registered trademark of "Agro Ittica Lombarda," a Northern Italian company that owns the largest Sturgeon Farm in Europe, which produces and markets worldwide an impressive 25 tons of caviar per year.
